Kevin Ryan has combined his interest in food and the human condition into studies of food science and anthropology, and ultimately in his consulting firm, Seattle area-based Malachite Strategy and Research. Proteins and the role they play in human diets has seen various generations of development; meat substitutes are in their third iteration and embarking on a fourth generation of innovation.
