Calgary-based plant-based ingredient maker Phytokana Ingredients Inc. and Maia Farms, a Vancouver-based company developing mycelium ingredients via biomass fermentation, have partnered on a CAD$32.5 million (US$24 million) project to valorize Canadian-grown fava beans.
The project aims to strengthen the domestic value chain for fava beans. Using its proprietary technology, which avoids heat and chemicals, Phytokana will process the beans into protein concentrate, starch flour and fava flour.
