In one of the many enlightening conversations I had with alt-meat pros of all stripes at the Good Food Conference last week, an executive in a cultivated meat company asked (rhetorically) why the businesses in the space are so prone to try to cover the entire supply chain — from laboratory R&D to industrial infrastructure to marketing and distribution.
Exactly right, I thought. As dehumanizing as Henry Ford’s moving assembly line…
