San Francisco-based Wildtype, a cultivated seafood firm, is partnering with restaurants in five states to bring cultivated salmon to diners — though many of the locations remain a mystery.
Wildtype salmon is already on the menu at Kann Restaurant in Portland, Ore., where James Beard Award-winning Chef Gregory Gourdet serves the product as smoked salmon with pickled strawberries.
